EAT Merimbula is a first-class providores event held on the foreshore of Fishpen Merimbula, overlooking pristine waters and working oyster leases. The event features local chefs and restaurateurs gathering in a market-style setting to create bespoke dishes featuring local produce. The dishes are presented in entrée sizes and prices capped at $8 per dish. Local offerings will include steamed pork boa buns, Balmain Bug Brioche, slow-cooked brisket, craft beer, oysters harvested from only metres away, Eden Mussel pies, local stone fruit crepes, and 12 hr fermented artisan donuts.
